Last night I had the honor and privilege of celebrating my Memere and Pepere's 69th wedding anniversary with them. It is amazing and inspirational to see a couple who make a marriage work for 69 years and I consider myself lucky to be a part of their very special night.
Being 95 and 93 my Memere and Pepere have fabulous stories of the past and being a lover of history I have always enjoyed hearing what it was like growing up and living through the past nine decades. Probably the most exciting party of my life with them is having them at my wedding this past July. Here is a picture of all (well mostly all...) the Bosse Grandchildren and Grandchildren-in-laws!
So every event I usually am a part of involves a dessert and this event was no different! I decided that because this is the season of apples (stay tuned for more tasty apple recipes!) I would do something with apples!
My semi-new favorite book of recipes comes from my main woman Martha. This book is amazing and has some awesome recipes. As I usually do with most of my recipes - I always change things up or add different aspects to the recipe.
The cupcakes I created for my Mereme and Pepere's Anniversary were Martha's Applesauce-Spice Cupcakes. This recipe calls for:
2 cups of all-purpose flour
1teaspoon of baking soda
3/4 teaspoon of salt
2 teaspoons of ground cinnamon
1/2 teaspoon freshly grated nutmeg
1/8 teaspoon of cloves
1 stick of unsalted butter at room temperature
1/2 cup of packed light-brown sugar
4 large eggs at room temperature
1 1/2 cup of unsweetened applesauce
1 cup of chopped pecans
1. You will need to preheat the oven to 350 degrees and line your muffin tins with paper liners.
2. Whisk together your dry ingredients
3. With an electric mixer on medium-high speed, cream butter and both sugars until pale and fluffy. Add eggs, one at a time, beating until each is incorporated, scraping down the sides as needed. Reduce the speed to low and add the applesauce, then flour mixture - beating until just combined after each. Stir pecans in by hand.
4. Divide the batter even among the lined cups. I always use a 1/4 cup measuring cup to do this. The recipe says it makes 18 but I got 24 out of it! :)
To add a little extra to these cupcakes, I decided while they were baking I would make up an apple mixture - very similar to something in an apple pie or apple crisp.
1. Frist, cut up 5 small McIntosh apples in to bit size pieces.
2. Place these apples in a baking dish, then add about a 1/4 cup of the light-brown sugar, 1 teaspoon of cinnamon, and 1/8 teaspoon of nutmeg.
3. Take about 3 tablespoons of the applesauce used in the cupcakes and mixed it in with the apples, sugar, and spices. Put the apple mixture in the oven (at 350) for about 20 minutes - or until the apples are fork tender.
4. Once the apples and the cupcakes have cooled, spoon the apple mixture onto the cupcakes and top it off with fresh whipped cream!
